INGREDIENTS:
- Balkan Seasoning Mix
- ⅓ cup freshly squeezed lemon juice
- Zest of 1 lemon
- ½ cup extra-virgin olive oil
- 3 red onions, cut into large pieces
- 4 orange bell peppers, cut into squares
- 2 zucchini, sliced
- 1 eggplant, cut into large cubes
- Protein of choice (Chicken, Tofu, Lamb) Optional to just do protein, the Balkan way!
Directions
- Chop all vegetables and arrange tightly onto two skewers.
- Brush the skewers with some olive oil and sprinkle Balkan Seasoning Mix.
- Heat up the grill on medium heat and cook until nicely charred.
- Garnish with parsley (optional). Serve immediately while hot.
